Yours is in Project Cars 2
For me, probably some of the F1 cars that only made League editions.

Although its modern (ish) I'd like to see this and some British hillclimb tracks to go with it.

My dream car in a sim would be the March 90P Porsche - complete with the distinctive turbo whistle

Oh dear, there's so many that is awfully missing...
- GP seasons of the '50s and '60s, that haven't been covered yet - Sportscars and prototypes from all decades (there are huge stretches missing starting with the interwar era, '40s, '50s, early '60s, '70s, late '80s and the WSC era) - small capacity GT cars from the '60s - Formula Junior
If I'd have to name some specific cars, I'd choose the BMW 328, a decent Porsche 356 Coupé, several variations of the Abarth GT design (Fiat, Simca, Porsche), the Lola T280/290 family and the Aston Martin AMR1

I'd love to drive an accurate representation of the Audi Quattro series in rFactor, tbh. All the Quattros that are in there so far feel way too loose for my liking, plus the power seems to just jump on suddenly.. Maybe there's gonna be one for AMS soon...

That now exists, and it is lovely!
It's in AC https://www.racedepartment.com/downloads/porsche-356a-1600gs-carrera-gt-coupe.22149/
Well worth checking out, for sure.
I should have added 'for a sim I own and works on my 'puter'.

I'd also kinda want to drive some century-old record cars like the Fiat S76 (Beast of Turin) or some Mercedes record cars from the 1930s..

Shapes aren't to difficult. Getting the 'special effects to work' might be the challenge
