Speaking of iRacing/AMS/rF2, cars that I would love to drive, being properly modelled:
50s F1, front-mounted engine. That's the only major era that AMS doesn't cover, the rest are all awesome. Porsche 956/962. Greatest racecar ever. Porsche 917K. To me, the first truly beast of a racecar. 1989-1991 Group A. Before DTM went nuts with the tech craze.
