Converting AVI to GIF and editing GIFS

I'm finalizing the Zands-report and would like to try some gifs as kind off a new feature in the report.

I captured some short video's in avi with Fraps.
But converting the AVI to GIF-format and then editing the GIF (cropping, filter, etc) has been a nightmare till now. Result is zero.

Does anyone have some experience with the above and able to recommend a program to use for the conversion and the editing? Can be under Windows 10 or for Mac.
