Were there some GT or Tourism monocar championship in the 60', 70' or 80's? I only know the Porsche cup, and the Venturi trophy in 90's.

There is the IROC-series, mainly focussed on the States, that ran only Chevy Camaros throught the seventies and most of the eighties.
However, the first IROC-season in 1974 ran with all identical Porsche 911 RSR's. These 911's are present in the Power&Glory-mod for GTR2 and, imho, are of the best handling sim 911's I drove. The series offcourse only ran on two tracks: Riverside and Daytona.
Then in the late seventies and early eighties, a BMW M1-series was ran as a teaser for the F1 Grand Prix's. Many F1-pilots of the time entered races. The series is very well modded in rFactor.
The Porsche Carrera-cup also goes back to the late eigthies, I think. The first 911 to be tuned into a cup-version was the 964 imo. That was introduced in 1989. Several national series ensued.
Back in the eighties, there also were some Ford Escort-cups, if I'm not mistaken.
And I'm sure there must be much more.

Probably not the type of cars that you want but I remember Ford Escort Mk2 1600cc sports, mid seventies. Renault 5 Challenge, Renault 5TL 956cc, 14 race series in 1974 UK.

There were also some Alfa Alfasud-series in the late seventies and even a European Alfasud-championship... Now that could be fun as a feeder series at HSO...
And later on an Alfa GTV-cup.

Procar M1 and Jaguar Challenge, but we already have both
There were some minor series and support races for main championships for example the Ford Fiesta cup, but it was mostly Renault who organized some really nice ones:

The 2CV could be a good physics/suspension exercice for Richard. I remember when I was child, I was shared between fun and affraid when it took a turn, the heel was so impressive.
Some anecdotes about 2CV : - The initial specification of the 2CV provides that it has a suspension which allowed "to cross a plowed field with a basket of eggs without breaking a single one." - The 2 CV was one of the series cars that offered the best "aerodynamics", and therefore the least friction with the air when it rolled (we will return to it later in the article).
- The 2CV had to go at the speed of a race horse at a gallop (60 kilometers hour).
- It is almost impossible to turn it over, at least in forward (most of the videos you find on the Internet about it are rigged, we often see a small ramp hidden on the side ... all that for that). Besides, if you could turn it around, Citroën offered you a new one! (And a high money bonus).
- In the first models, it was even possible to replace gasoline with heating oil or lamp oil (it was called lamp oil, which was used at the time for heating or lighting) .

My father went about twice to Monza and saw this series before the F1 race. I have to ask him again, but I think he did say those guys drove like devils

I absolutely love the 2CV! Is it called the duck anywhere else other than in Germany? My grandfather has one and he's still driving it regularly! Absolute joy to drive

In Sweden, a series called "Superstars" that featured strictly Chevrolet Camaros emerged in the 70's. This series was invited to Zandvoort in 1979, in the race in which Rob Slotemaker was tragically killed.
It was by no means a "spec" series, some of those cars looks quite funny. It's modern variant is called V8 Thunder Cars, and its no longer a strictly Camaro series, but it was for a long time (until 2011 IIRC). But now it's more of a silhouette series than before.

The problem with most historic spec series as far as simracing is concerned is they concern rather slow cars so I'm not sure you would find a crowd to race them. The point of many of those spec races is to offer affordable racing for amateurs so they often were close to road specifications.
The slowest I can remember probably is the Ford tractor race that was held on the 1972 British GP weekend in Brands Hatch ! In France we had the Coupe des Provinces in 1964 and 1965, which of course help start the career of drivers like Pescarolo, Depailler, Servoz-Gavin, Mieusset, Dayan, Dolhem, Lacarreau, ...etc. Those were very slow indeed (85 HP ) Lotus Sevens, and are featured in the Caterham mod for rFactor I think.
While strictly not spec racing, there are several examples of a car dominating its class to the point it was virtually the only one competing. This was particulary the case in 1950/60s SCCA Production racing, with cars such as the Porsche 356 (and its various iterations along the years), Chevrolet Corvette, MG TC, ALFA-Romeo Giulietta Veloce, Austin-Healey 100, ...etc. It also happened in Europe with the Mini, Cortina or Escort.
The SCCA has quite a history of spec racing, with the Renault (later Ford) Spec Racer of the mid 1980s and the 1990s Shelby Can-Am concept which was quite a competitive racing car.
Another 1990s one is the TVR Tuscan Challenge from Britain, quite fast cars and rather spectacular with their big V8 Rover engines.

Not exactly what op asked for, but:1954 deutsch-bonnet monomil, a single make single seater series. Fwd F3 500 car but with 850 panhard engines. Fizzled out after the 55 le mans disaster.
(I think this is a monomil, with their 500 cars having a more twin nostril front end. Or it could be the otherway around.)

Yes as Benny asked for tin-tops I didn't mention the Monomills or the Cisitalia voiturette series of 1947 from the single-seater department. The Monomills were an awful piece of racing experiment, with their dubious looking DB chassis, front-wheel drive (!) and asthmatic 850cc stock Panhard engines : they were ugly, veryyyyy slow and handled atrociously too !
